
Alright, y’all, let’s talk about the glorious meatloaf sandwich. A true Southern staple and the absolute best way to use up that leftover meatloaf. This is undoubtedly my favorite way to enjoy leftover meatloaf.
What You’ll Need:
- Leftover Meatloaf unless you just feel like making one for sandwiches alone. I won’t judge!
- Your favorite sandwich bread. For these, I typically use Arnold Bread because it is a sturdy bread and can handle the weight.
- Condiments (Mayo, Mustard, Ketchup, BBQ) it’s whatever you like.
- Fixings (Lettuce, Tomato, Onion, Pickles) again, it’s whatever you like.
- Sliced Cheese (I prefer Sargento Sharp Cheddar); you can use whatever you prefer.
Directions:
- Cut a generous, thick slice of your leftover meatloaf. About an inch thick is perfect.
- Add a little mayonnaise to the bottom piece of bread. Some folks like a smear of mustard or even a tangy barbecue sauce or more ketchup. Don’t be shy!
- Layer on those fixings.
- Place that glorious meatloaf slice on top, add your spread to the top slice of bread, and finish the sandwich.
Serve it up with some chips, potato salad, or a side of collard greens. This is a sandwich that’ll stick to your ribs and make you smile.
